Sweet and Savory Paneer

Paneer cheese has been used since antiquity; dating to at least 1500 BC in India. It’s unique texture allows for a variety of uses and tastes for this grill-able cheese. This sweet, yet savory
combination is appropriate as an appetizer, side dish or dessert.
Combine in a sauce pan; coat with extra virgin olive oil, black pepper and cardamom. Cook on medium heat until the nuts are slightly toasted and aromatic.
½ cup of dried cranberries
8 seeded dates
½ cup of walnuts
In a small frying pan, brown 2 slices of paneer cheese (about the size of a deck of cards) in extra virgin olive oil and Himalayan pink salt. The cheese will maintain it’s size and shape.
Serving Two: place the light crispy cheese in center and top with the warm fruit and nut mixture. Drizzle with a tablespoon of honey or use ½ honey and ½ maple syrup.
